Waterkloof Seriously Cool Chenin Blanc 2023

The philosophy of producing premium white wines on Waterkloof is always the same. At Waterkloof, a traditional and minimalist approach is followed, which means that interference with the natural vinification process is kept to a minimum. Such an approach allows the flavours to unfold wonderfully and find full expression in the wine ready to be enjoyed. To achieve this, the grapes are pressed all over the bunch, as this is the gentlest method of extracting the juice. The juice is then left to rest for 24 hours, after which it is transferred from the tank into 600-litre barrels. At Waterkloof the wine is not mixed with commercial yeast cultures. Rather, they rely on the naturally occurring yeast in the vineyard, which naturally ferments the juice. Furthermore, neither acid nor enzymes are added to the wine. The fermentation process lasted 5 months, after which the wine was only lightly filtered before bottling.
