Vondeling Bowwood Pinotage 2020

The grapes were hand-picked in the early hours of the morning and carefully selected for further production. Upon arrival at the winery, the grapes were cooled down before being completely destemmed and subjected to a second selection. The berries were not crushed but fermented as whole berries, resulting in a gradual extraction of tannin and colour, for fine finesse and great ageing potential. During fermentation in open fermentation tanks, the cap was submerged at regular intervals for five days, and just before the desired degree of dryness, it was pressed in the traditional basket press into American oak barrels. Once the alcoholic fermentation was complete, the malolactic fermentation was completed in the barrel. The wine then matured on the yeast for 14 months, after which the best 5 barrels (300 l per barrel) were blended and matured in the barrel for a further 8 months. The wine then spent a further 6 months in steel tanks, which ensures stability and clarity in the wine, and was finally bottled. Before the wine was released, it was aged in the bottle for another year.
