Tokara Reserve Collection Elgin Sauvignon Blanc 2023

The grape material was completely destemmed, crushed and immediately pressed. The resulting juice was left to rest overnight before the clear juice was skimmed off the next morning. Only the free flowing juice from the press was used for this Reserve Sauvignon Blanc. The juice fermented in stainless steel tanks at a controlled 15° C with the addition of selected yeast cultures. 13% of the wine fermented in large and older oak barrels and then matured for 5 months in the same barrel. Once fermentation was complete, the wine matured in steel for five months with regular stirring (batonnage) on the yeast before being bottled stabilised and filtered.
