Plaisir de Merle Grand Brut Cap Classique 2018

This elegant and characteristic Méthode Cap Classique was created in the classic French tradition from the two noble grape varieties Chardonnay and Pinot Noir. The 60 hardonnay provides clean flinty notes and nuances of crisp green apples, while the 40% Pinot Noir transfers body, fullness of flavor and ripeness to the Cap Classique. The hand-picked grapes were whole bunch pressed and the clear juice was left to rest with minimal skin contact before being pumped into stainless steel tanks for cold fermentation. A portion of the wine fermented in four-year-old barrels and underwent malolactic fermentation. Once the alcoholic as well as partial malolactic fermentation was completed, the wine was prepared for secondary fermentation in the bottle, where it was aged for 28 months before being expertly freed from lees/yeast sediment using the traditional "dégorgement" process.
