In the picturesque Klein Karoo, close to the village of Calitzdorp, is the award-winning Peter Bayly Wines Winery in the idyllic Groenfontein Valley, where owners Peter and Yvonne Bayly have been fulfilling their dream of producing their own artfully handcrafted Port style wines for almost twenty years now with great love and passion for detail. The highly endowed wine portfolio includes a Cape Vintage, a Cape White, a Cape Late Bottled Vintage and the Peter Bayly Cape Pink as well as distinctive red wines from the Klein Karoo. The estate comprises 1.2 hectares of vines of classic Portuguese varieties such as Touriga Nacional, Tinta Barroca and Souzão on the slaty and quartzy soils of the vineyards. Although Groenfontein lies deep in the semi-arid Klein Karoo, it is blessed with an abundance of water. Temperate conditions lead to vines with low yields and a longer and slower ripening period, resulting in fruits with intense colour and flavour complexity. The exceptional fruit quality and artisan winemaking techniques - including natural fermentation in Lagares (traditional Portuguese open fermentation tanks), traditional crushing of the grapes with bare leg strength, and aging in ripe, large-volume French oak barrels - result in limited quantities of distinctive artisan class. Peter and Yvonne's philosophy in making their wines is that every step of the winemaking process, from soil conditions and irrigation, to pruning and bottling, is carried out to the highest standards and with unwavering attention to detail. Their greatest strength is undoubtedly the size of their vineyard. Of the 7 hectares, only 1.2 hectares are vines, which allows them to produce meticulously and holistically in every respect, always with the aim of achieving a top quality product!
