Perdeberg Longevity Natural Sweet Chenin Blanc 2021

The grapes were cut from the vine at the desired natural sugar content and dried into raisins while still hanging on the vine. In the cellar, the raisins were then completely destemmed and left to swell on the skins for an initial two days with regular pumping over of the juice. This method ensured that the deliciously ripe fruit flavors were optimally extracted from the skins and concentrated dried fruit. The mash was then pressed and the clear juice vinified. Once fermentation was complete, the wine was transferred to French oak barrels, 500 liters per barrel, where it aged for 6-8 months until the lush, sweet and lightly wooded style was achieved. Finally, this award-winning Chenin Blanc dessert wine spent another 12 months in the bottle.
