Lemberg Pinot Noir 2021

The grapes were harvested in the cool morning hours and cooled down to 4°C on arrival at the winery, before being completely destemmed and sorted berry by berry. The berries were then subjected to a 48-hour cold swelling phase and fermented partly in a spontaneous way without any addition of commercial yeasts. Once fermentation was complete, the wine was transferred to French oak barrels where the malolactic fermentation was completed. The wine then matured for 12 months in 500l French oak barrels and in second and third barriques with a capacity of 225l per barrel.
