Treatment in the cellar

The grapes for this dreamlike cuvée were harvested in the cool morning hours and upon arrival in the cellar were hand-sorted and destemmed berry by berry. The Grenache portion was subjected to a 48-hour cold swelling phase before natural fermentation began.
