False Bay Peacock Wild Ferment Syrah 2022

The grapes were harvested by hand and fermentation in large wooden fermenters was carried out exclusively by the wild yeast naturally present on the fruit and in the cellar. The juice rested on the skin for 30 days and was then drained by pure gravity and the skins pressed through the basket press. The maturing process in 600 l French barriques lasted for 24 months, after which the wine was lightly filtered and bottled for ready consumption.
