Cloof Duckitt Red 2021

Cabernet Franc and Cabernet Sauvignon were separately mixed with selected yeast cultures immediately after harvesting and then fermented for 8 days at a controlled 30°C. After a further 8 days swelling time, both wines were pressed. The Merlot, on the other hand, was first subjected to a 2-day cold swelling phase after the harvest before being mixed with yeast cultures from Bordeaux and fermented for 5 days at a controlled temperature of 32°C and then pressed after a further 5 days of swelling. Cabernet Sauvignon, Cabernet Franc and Merlot were blended and then matured for 10 months in French oak barrels.
