    Treatment in the cellar

    The hand-picked grapes were selected bunch by bunch and berry by berry with great care for the further production process and lightly crushed before going into the press. The juice obtained was left to rest in steel tanks at regulated 12˚ C and after two days was filled into clay amphorae where natural fermentation began. Once fermentation was completed, 500 litres were put into selected oak barrels for further maturation for 11 months, some of which completed the malolactic fermentation. The wines matured in clay amphorae did not undergo malolactic fermentation and therefore have a fresher and more mineral character. After 11 months of maturing, all wines were blended and bottled for final enjoyment.
